For each ingredient, divide what you paid by the edible amount you get after trim or waste (yield), then multiply by how much the recipe uses. Sum every line for the batch total. Divide by the number of portions the recipe yields for cost per serving. Optional menu price turns that into a dish-level food cost percentage.

Total recipe cost is what the full batch costs to make. Cost per serving divides that by your recipe yield — the number you actually plate or sell.
The highest-share ingredients are your pricing levers. A protein or dairy line that dominates the total deserves the most portion and supplier attention.
Yield % adjusts for peel, bone, trim, and waste. A 75% yield on onions means only three-quarters of what you bought is usable — ignoring that understates true cost.
When you enter a menu price, food cost % = (cost per serving ÷ menu price) × 100. Compare that to your targets and to the Food Cost Percentage Calculator for period-level checks.
Habits that keep recipe costs accurate as menus and suppliers change.
Use the same unit within a recipe (all pounds or all kilograms). Mixing units without converting will skew every line.
Update purchase costs when supplier prices move. A recipe card from last season is a guess, not a control tool.
Yield should match how the kitchen actually portions the batch — not the theoretical maximum. Train staff on the same portion spec the calculator uses.
Sauces, stocks, and bases should be their own recipes first. Enter the finished sub-recipe cost as one ingredient line in the parent dish.
